Just to add to this discussion, I read on another forum, that the newer mapping on the Quest2 can cause re-draw delays of between 8-15 seconds!
Can any of our Quest2 brethren testify to this?

You must have v6 installed, in order to install v7. It is an upgrade only.

The 'optimise vias' menu option can be a little tricky to find.
When you have your route selected (Highlight it in the route list and press [OK], press [Menu] and select [Optimal Via order].
